Avocado filled with smoked salmon and egg salad

  • 2 Avocado
  • 5 Eggs
  • 1 tbsp Butter
  • 50 g Mayonnaise
  • 1 tbsp Capers
  • 1 tsp Dill fresh
  • 2 tsp Coriander fresh


  1. Cut avocado in half and remove the stones

  2. Remove / peel off the avocado skin

  3. To make the eggs, whisk the eggs in a bowl. Chop the butter into small cubes and mix into the eggs

  4. Cook the eggs on a medium heat. Before the egg sets, gently stir them to scramble the eggs until cooked through

  5. Combine the scrambled eggs, mayonnaise, capers and chopped herbs

  6. To serve, add some salmon slices on top of the avocado and top with the scrambled egg mixture
